I’m a big fan of Jami too. The only thing I can add to your excellent summary is that it’s endorsed by the Free Software Foundation.
You’re right about it being fussy with clients though.
I highly recommend Ardour. I haven’t used Ubuntu Studio but I believe it’s pre-configured to minimise latency when monitoring audio.
Most people on the Ardour forum recommend AVlinux for this reason too. I’m sure you will be fine with Ubuntu Studio but I would definitely check AVlinux.

There are some great plugins coming out for it now as well. I highly recommend checking out Batcher, which you can use not only to batch convert files but also to apply sets of adjustments including from G’MIC. Really powerful and useful tool with granular control.
There’s also a really good frequency separation plugin and of course Resynthesizer.

Have you tried booting from an older kernel? When I was on Fedora I had things like this happen from time to time and would always go back to one of the archived kernels and wait for another update.
No, it’s because I like open source operating systems and a linux tablet would mean it could be used for other things too if needed.
